Golden Saffron Kichari

A nourishing Ayurvedic staple that is easy to digest, deeply satisfying, and perfect for cleansing. Kichari is considered a complete meal in Ayurveda — balancing all three doshas.

Golden Saffron Kichari

Ingredients

  • 1 cup basmati rice
  • ½ cup yellow mung dal
  • 2 tbsp ghee
  • 1 tsp cumin seeds
  • 1 tsp mustard seeds
  • ½ tsp turmeric
  • Pinch of saffron threads
  • 4 cups water
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. 1.Rinse rice and dal together until water runs clear. Soak for 20 minutes if possible.
  2. 2.Heat ghee in a heavy pot over medium heat. Add cumin and mustard seeds; cook until they begin to pop.
  3. 3.Add turmeric and saffron, stir for 30 seconds.
  4. 4.Add the rinsed rice and dal, stir to coat with spices.
  5. 5.Add 4 cups of water and bring to a boil. Reduce heat, cover, and simmer for 25-30 minutes until soft and porridge-like.
  6. 6.Season with salt and garnish with fresh cilantro.
