Golden Saffron Kichari
A nourishing Ayurvedic staple that is easy to digest, deeply satisfying, and perfect for cleansing. Kichari is considered a complete meal in Ayurveda — balancing all three doshas.

Ingredients
- •1 cup basmati rice
- •½ cup yellow mung dal
- •2 tbsp ghee
- •1 tsp cumin seeds
- •1 tsp mustard seeds
- •½ tsp turmeric
- •Pinch of saffron threads
- •4 cups water
- •Salt to taste
- •Fresh cilantro for garnish
Instructions
- 1.Rinse rice and dal together until water runs clear. Soak for 20 minutes if possible.
- 2.Heat ghee in a heavy pot over medium heat. Add cumin and mustard seeds; cook until they begin to pop.
- 3.Add turmeric and saffron, stir for 30 seconds.
- 4.Add the rinsed rice and dal, stir to coat with spices.
- 5.Add 4 cups of water and bring to a boil. Reduce heat, cover, and simmer for 25-30 minutes until soft and porridge-like.
- 6.Season with salt and garnish with fresh cilantro.
